Easy Vegetarian Thanksgiving Casserole

Stuffed acorn squash Pumpkin soup Green bean casserole Prep Time: 5 Min. Cook Time: 50 Min. What you need:
* 2 c. of your favorite prepared stuffing
* 3/4 c. prepared cranberry sauce * 5 oz. meatless mock-turkey deli slices, shredded (or, if using a loaf, crumbled or sliced to 1/4-in.) * 1 c. prepared mushroom gravy, divided * 2 1/2 c. prepared mashed potatoes * salt and pepper to taste What to do:
1. Preheat oven to 375°F. Lightly spray 8"x8"x2" casserole dish with cooking spray.
2. Spread stuffing along bottom of dish. Press down to condense. Spread cranberry sauce over stuffing. If using jellied cranberry sauce, slice 5-6 slices at 1/4" and layer on top of stuffing, filling in empty spaces. 3. Evenly top cranberry sauce with mock-turkey. Drizzle with 1/2 c. gravy. 4. Top with mashed potatoes, being careful to completely cover the casserole and not having any holes that expose the inside casserole.* 5. Add salt and pepper to taste. 6. Cover with lid or aluminum foil and bake for 40-50 min., or until casserole is hot throughout. Remove from oven and plate. Drizzle pieces with remaining 1/2 c. warm gravy. TIPS: * If you are having difficulty spreading the mashed potatoes evenly: With clean hands, wet fingertips with water and spread potatoes until all holes are covered and the surface is even. Be sure to push potatoes all the way to the inside walls of the dish. * If you prefer a firmer crust on the potatoes, in the last 5-10 min. of cooking time, uncover and bake until any potato peaks are golden. |
