                         Prep Time: 15 Min. Cook Time: 15 Min. What you need: * 40 jumbo pasta shells  * 3 c. cooked turkey breast, diced * 3 green onions, minced * 1/4 c. crystallized ginger, finely minced * 1/4 c. carrots, finely diced * 1/4 c. sliced almonds * 2 medium ripe pears, diced * 1/3 c. low fat mayonnaise * 1/4 c. soft, fresh goat cheese * 1 Tbsp. lemon juice * salt and pepper to taste * watercress, mint, mache (a miniature gourmet salad green) for garnish What to do: 1. Cook pasta according to pkg. directions, drain well.  2. Combine the turkey and next five ingredients in a bowl. Mix together the mayonnaise, cheese, and lemon juice until well blended. Stir into the turkey mixture and toss to coat. Season to taste with salt and pepper. 3. Stuff each shell with 1-2 Tbsp. of the filling. Arrange on a platter and garnish with watercress. | |
