Candied Red Grapefruit Rind

Prep Time: 10 Min. Cook Time: 40 Min. Marinate: 1 Hr. What you need:
* 1 c. water
* 2 c. honey * peel from 1 grapefruit (red if possible), cut into 1/4 in. thick pieces * 1 c. granulated sugar What to do:
1. Combine water and honey in a saucepan. Simmer over medium
heat. Add grapefruit pieces, simmer for 40 min. Remove from heat and let grapefruit sit in honey syrup for at least 1 hr. or overnight. Remove strips from syrup and roll in sugar. Store in an airtight container for 1 week. * Sweet, tart and beautiful. These candy-like gems balance the creaminess of Mascarpone and Ricotta. |
